Orders flow through automatically. Subtract freezer cases, add any extra packs beside the proposal, and see the new bake total and flour together.

Add freezer stock for a variety with no order

Extra retail stock only: Regular 24 packs per case; Large 12. Existing order rows already have an extra-packs field.

Fulton Street Market is included in production and does not generate invoices. Planning and saving do not move physical stock.

Tray and time settings

Trays are informational. They never limit, score, or change a production-day load.

Regular boxes: 24 retail bags or 16 foodservice bags. Large: 12 bags. Extra Large: 6 bags. Foodservice Regular bags contain 10 tortillas.

Estimated work = rounding + baking + one hour setup/cleanup on active days. Additional mixing time is not separately estimated. Boxes assume each product is packed separately that day.
